We’re thrilled to welcome David Suro author of Agave Spirits: The Past, Present, and Future of Mezcals, founder of Siembra Tequila, the Tequila Interchange Project, and the Bat Friendly Initiative. We’ll be pouring five tequilas and mezcals as he leads us through the history of agave spirits, the methods of production, and how we can ethically consume tequilas and mezcals, even as the explosion in the spirit’s popularity has made that increasingly difficult. Siembra has long been one of our favorite tequilas, both because it is an explicitly educational brand and because it is delicious! Suro and his brands actively preserve local resources, champion small traditional small batch agave spirits, and make truly wonderful spirits.

To accompany Suro’s spirits, our own tremendous chefs will be preparing a five course meal. We enjoy making the menu food, of course, but we also love an opportunity to showcase how tremendously talented everyone in the co-op is. Expect the same care and attention to detail, but for the purposes of accentuating the agaves.
